Ingredients
Serves: 4- 1 (14 ounce) tube refrigerated pizza crust
- 1 pound boneless, skinless chicken breasts, cubed
- 3 teaspoons canola oil, divided
- 1 teaspoon fajita seasoning mix
- 2 bell peppers, cut into thin strips
- 1 onion, cut in half and sliced
- 1 garlic clove, minced
- 1/2 cup salsa
- 1/4 teaspoon black pepper
- 1 1/2 cups shredded Monterey Jack cheese
- 2 tablespoons minced fresh cilantro
Preparation method
Prep: 15 mins | Cook: 10 mins1. Preheat oven to 425 degrees F and coat a rimmed 15×10-inch baking sheet with nonstick cooking spray.
2. Stretch out the crust to fit the pan, poke several times with a fork, and bake for about 8 minutes to lightly brown.
3. While crust is baking: pour 2 teaspoons oil into a large skillet and set over medium heat. Cook chicken in hot oil for about 6 minutes, or until no longer pink inside; add seasoning mix and continue to cook for 1 more minute. Pour onto a plate and cover with foil.
4. Pour the final 1 teaspoon of oil into the skillet. Cook peppers and onion in hot oil for 3 minutes, then add garlic and cook for 2 more minutes. Vegetables should be fork-tender at this point.
5. Toss vegetables with salsa, black pepper, and cooked chicken.
6. Pour chicken-vegetable mixture onto the baked crust. Top with cheese.
7. Bake for about 10 more minutes, until cheese is melted and pizza is heated through. Garnish with cilantro, slice into wedges, and serve.
