Chicken and Almond Cream recipe

Ingredients
200 g | chicken breast fillet |
salt and freshly ground black pepper | |
50 g | almonds, chopped |
1 | orange, zest and juice |
4 tbsp | single cream |
Instructions
In a saucepan, cover the chicken breast with salted water and bring slowly to a boil. Cook for 5 minutes, switch off the heat and allow the meat to cool completely in the stock.Toast the almonds in a pan until golden. Remove from the pan.
Dice the cold meat. Place the meat together with almonds, orange zest, 4 tablespoons of orange juice and the cream into a blender and process until smooth. Season to taste with salt and pepper.
Serve with fresh bread.
