Ingredients

200 g chicken breast fillet
salt and freshly ground black pepper
50 g almonds, chopped
1  orange, zest and juice
4 tbsp single cream

Instructions

In a saucepan, cover the chicken breast with salted water and bring slowly to a boil. Cook for 5 minutes, switch off the heat and allow the meat to cool completely in the stock.

Toast the almonds in a pan until golden. Remove from the pan.

Dice the cold meat. Place the meat together with almonds, orange zest, 4 tablespoons of orange juice and the cream into a blender and process until smooth. Season to taste with salt and pepper.

Serve with fresh bread.
