Ingredients

	For the compote:
2 glass(es)	morello cherries, drained, 370g each
40 g	cornstarch
1	lemon, grated rind
50 g	sugar
2 tsp	vanilla extract
	For the curd cheese:
3	bananas
1	lemon, juice
500 g	curd cheese
300 g	cream yoghurt
60 g	sugar
300 ml	single cream

Instructions

For the compote:
Drain the cherries, reserve the juice. Measure 350 ml, if not enough, fill up the missing with water. Mix the cornstarch with some juice until smooth and set aside. Bring the juice to the boil, add the lemon rind sugar and vanilla sugar. Stir in the corn starch mixture. Add the cherries and simmer over low heat for some minutes. Allow the compote to cool, while stirring occasionally.

For the curd cheese:
Peel the bananas and purée with the lemon juice. Mix in the curd cheese, the yogurt and the sugar. Whisk the single cream until stiff, then fold in the whipped cream.

To serve:
Divide the banana curd cheese into 12 longdrink glasses and layer the cherry compote on top.
