Ingredients
For the dough: | |
250 g | butter |
200 g | sugar |
1 tsp | vanilla extract |
1 pinch(es) | salt |

250 g | flour |
50 g | corn starch |
3 tsp | baking powder |
2 tbsp | rum |
For the dark dough: | |
2 tbsp | cocoa powder |
1 tbsp | rum |
breadcrumbs | |
For the filling: | |
2 glass(es) | morello cherries, drained weight 370g each |
2 packet(s) | custard powder, vanilla flavoured, to cook |
For the topping: | |
50 g | dark chocolate |
50 g | single cream |
1 tbsp | rum |
500 g | single cream |
Instructions
In a bowl whisk the butter until soft and smooth. Bit by bit trickle in the sugar, the salt and the vanilla extract. Stir, until the ingredients are well combined. Fold in the eggs, one at a time.Combine the flour, the baking powder and the corn starch. Slowly sieve over the egg mixture and stir in, in turn with the rum.
Preheat the oven to 180°C.
Grease a baking tray 30*40 cm and coat it with the breadcrumbs. Evenly spread 2/3 of the dough onto the tray and flatten.
For the dark dough, stir into the remaining dough the cocoa powder and the rum. Spread the dark dough on top of the bright one, then pierce with a fork, to mix them slightly. Transfer the tray into the oven and bake for 25-30 minutes.
After the baking time, place the baking tray on a wire rack.
For the filling, drain the cherries in a sieve and collect 850 ml of the juice. If not sufficient add some water. In a saucepan, mix together the juice and the custard powder, and heat stirring constantly. When hot, add the cherries. Evenly divide the cherry mixture on the cake. Allow to cool.
For the topping roughly chop the chocolate. In a saucepan, heat up 50g of the single cream, then take from the heat. Add the chocolate and stir until well combined and smooth. Add the rum and leave to cool.
Whisk 500g single cream until stiff. Evenly divide the whipped cream on the cherries. With a fork, shape small wells into the cream and fill the wells with the melted chocolate mixture.
