- Ingredients
- 1 loaf banana bread
- 1 cup dried cherries
- 1-1/2 cups milk
- 4 eggs
- 1/2 teaspoon banana extract
- 1 teaspoon vanilla
- Crunchy Oat Topping:
- 6 Tablespoons butter
- 3/4 cup flour
- 1 teaspoon cinnamon
- 1/2 cup rolled oats
- 3/4 cup packed brown sugar
- 1/2 cup chopped walnuts
- Orange Sauce:
- 1/4 cup fresh squeezed orange juice
- 1/4 cup packed brown sugar
- 2 Tablespoons butter
Slice banana bread into eight 1-inch slices. Combine eggs, milk, banana extract, and vanilla; whisk until fully mixed. Spray a 13 x 9-inch glass baking dish with non-stick spray. Place bread into pan and pour egg mixture over bread; cover and refrigerate overnight.
Place in a bowl all topping ingredients except the nuts. Cut the butter into the mixture until crumbly; add nuts and mix into topping. Pour 1/2 cup boiling water over the cherries and let sit for 10 minutes; drain and spread on top of bread. Spoon topping mix over the cherries on the bread. Bake in a 325-degree oven for 40 to 45 minutes or until puffed and golden brown. Serve with orange sauce and maple syrup.
Orange Sauce:Combine ingredients in a small sauce pan. Cook over low heat for 5 to 10 minutes until it starts to thicken. Remove from heat and keep warm.
