An incredible homemade ice cream float makes an easy summer dessert.

Ingredients

Serves: 7

• 1 cup water
• 3/4 cup sugar
• 2 cups club soda, chilled
• 3 tablespoons maraschino cherry juice
• Chocolate syrup
• 7 cups chocolate ice cream (14 scoops)
• Whipped cream and maraschino cherries, for serving

Preparation method

Prep: 30 mins | Cook: 5 mins

1. Combine water and sugar in a saucepan and bring to a boil over medium heat. Turn heat down to medium-low and cook, stirring, for 5 minutes to dissolve the sugar. Turn off the heat and allow the mixture to cool to room temperature.
2. Add club soda and cherry juice to the sugar mixture.
3. Scoop 1 cup of ice cream into a tall glass. Top with chocolate syrup, to taste, then pour some of the cherry juice club soda mixture on top. Garnish with whipped cream and cherries. Repeat with remaining ingredients to make 7 drinks total.
