Cheesy spinach squares details
- Ingredients
- One 10 ounce bag of spinach
- 1/3 cup flour
- 1 teaspoon baking powder
- 1/2 teaspoon pepper
- 1/4 teaspoon nutmeg
- 1/2 teaspoon salt
- 2 eggs
- 1 cup milk
- 1 Tablespoon butter, melted
- 8 ounces sharp cheddar cheese, grated
- 1/4 cup finely chopped sweet red pepper
- 1 green onion, chopped
Wash spinach and tear off stems. Cook spinach in a saucepan for 10 minutes without additional water. Squeeze water from cooked spinach and chop coarsely. Set aside.
In a large bowl, stir together flour, baking powder, pepper, nutmeg and salt. In a separate bowl, whisk together eggs. Continue to whisk and add milk and butter. Stir in sharp cheddar cheese, chopped spinach, chopped sweet red pepper, and green onion. Pour this mixture over the flour mixture and stir until just combined. Pour into greased 11 x 7 inch baking dish. Bake at 350 degrees for 45 minutes. Let cool 10 minutes and cut into squares.
