Peaches n cream muffins recipe details
- Ingredients for Muffin
- 2 cups sugar
- 4 cups flour
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 3 eggs
- 3/4 cup oil
- 2 cups milk
- 2 cups drained diced canned peaches (reserve 1 Tablespoon peach syrup for filling)
- Ingredients for Filling
- One 8-ounce package. cream cheese, softened
- 3/4 cup sugar
- 1 teaspoon almond extract
- 1 Tablespoon peach syrup
- Ingredients for Topping
- Cinnamon sugar
Preheat oven to 350 degrees.
Combine cake ingredients except peaches. Mix thoroughly and then stir in peaches. Fill well greased muffin tins 3/4 full. In a separate bowl mix the filling ingredients until smooth. Drop 1 teaspoon of filling on top of the batter and swirl. Sprinkle with cinnamon sugar and bake for 20-30 minutes.
Makes:30-36 muffins.
