Ingredients
Serves: 4- 4 red potatoes, cubed
- 3 tablespoons water
- 1 small red bell pepper, sliced
- 1/2 cup sliced sweet onion
- 2 teaspoons olive oil
- 4 bacon slices, chopped
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- Sauce:
- 1 1/2 teaspoon butter
- 1 tablespoon flour
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- 3/4 cup milk
- 1/4 cup shredded Monterey Jack cheese
- 1 tablespoon chopped green chiles, or to taste
Preparation method
Prep: 20 mins | Cook: 25 mins1. Combine potatoes and water in a glass bowl. Cover with plastic wrap. Microwave on High for about 5 minutes to cook the potatoes, then pour off any liquid in the bowl.
2. Pour olive oil into a skillet and set over medium heat. Cook pepper, onion, and bacon in hot oil for about 8 minutes to brown the bacon and soften the vegetables, then stir in the cooked potatoes. Season with salt and pepper.
3. Cook, stirring, for about 10 minutes to crisp up the potatoes.
4. Meanwhile, make the cheese sauce: melt butter in a saucepan and add flour. Whisk and cook for 1 minute, then season with salt and pepper and add milk.
5. When milk comes to a boil, cook for 1 minute to thicken, then ad cheese and chiles. Stir well.
6. Serve potatoes with cheese sauce spooned over the top of each helping.
