My kids just love this casserole and when they come home I have to promise to fix it for them.

Ingredients
Serves: 8
- 12 ounces uncooked elbow macaroni
- 1 pound kielbasa or polish sausage, sliced
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 medium zucchini,quartered and sliced
- 2 medium carrots, grated
- 1 garlic clove, miced
- 1 jar{1 pound 10 ounce} spaghetti sauce
- 1 can {14-1/2 ounces} stewed tomatoes
- 1 egg beaten
- 1 {15 ounces} ricotta cheese
- 2 cups shredded Cheddar cheese
- 2 cups shredded mozzarella cheese
- 2 green onions, chopped
Preparation method
Prep: 1 hour | Cook: 1 hour
1. Preheat oven to 350 degrees F (175 degrees C).
2. Cook macaroni according to package directions, drain and set aside. In a large skillet brown the sausage in oil over medium heat. Add the onions, zucchini, carrots and garlic cook and stir 7 minutes or until crisp-tender.Stir in the spaghetti sauce and tomatoes. Bring to a boil and let boil for 5 minutes.Then reduce heat and simmer uncovered for 20 minutes. In a 13-in.x 9-in.x 2-in. baking dish layer the bottom with macaroni and meat sauce. Combine the egg and the ricotta cheese and spoon over the meat sauce. Then put another layer of meat sauce. The sprinkle the two cheeses on top.
3. Cover and bake at 350 degrees F for 15 minutes. Uncover, bake 15 minutes longer or until cheese is melted. Garnish with green onions.
