An amazing, hearty winter soup, and a perfect way to put those leftover mashed potatoes to good use. I make a batch after every big holiday occasion and freeze portions for later use throughout the winter.

Ingredients
Serves: 12- 2 pounds ground beef
- 3 cups milk
- 12 ounces processed cheese food (velveeta(R)), cut into 1 inch cubes
- 5 cups garlic mashed potatoes (made with butter and sour cream)
- 1/4 cup dried chives
- 2 teaspoons salt
- 2 teaspoons celery salt
- 1 tablespoon dried basil
- 1 diced onion
Preparation method
Prep: 15 mins | Cook: 45 mins1. Brown and crumble ground beef, then drain and set aside.
2. Combine milk and cheese in a heavy stock pot and stir constantly over medium heat until cheese has melted.
3. Add mashed potatoes one cup at a time; use a wire whisk to incorporate each cup before adding the next.
4. Stir in chives, salt, celery salt and basil.
5. Add onions and ground beef; stir constantly as you bring the chowder to a boil, then reduce heat to low and allow to simmer 15 minutes or until onions are tender; stir frequently but not constantly, as chowder simmers.
