Cheese and onion loaf recipe details
Ingredients
1 large | onion, chopped |
50 g | butter, melted |
225 g | strong white flour |
225 g | strong wholemeal flour |
1 sachet | Allinsons dried yeast |
1 tsp | mustard powder, heaped |
175 g | Cheddar cheese, grated |
300 ml | lukewarm milk and water (50:50) |
salt and pepper |
Instructions
Lightly grease a 2lb loaf tin. Melt 25 g of the butter and fry the onion until soft and light brown, then set aside to cool.Into a large bowl sift the flour and mustard powder, stir in the yeast and season with salt and pepper. When mixed, add ¾ of the grated cheese and the onion and stir in. Make a well in the centre, add the milk and water and blend to a soft dough.
Turn onto a lightly floured surface and knead for ten minutes.
(I fill the flour in the bowl of the Magimix fitted with the dough blade, add the ingredients in stages and pulse in, then switching on to add the milk and water. I then process for about 1 minute to knead.)
Place the dough in a lightly oiled bowl or plastic bag and leave to rise in a warm place for around 60 minutes, or until doubled in size.
Turn the dough out onto a lightly floured surface and knock back. Divide it into 20 equal size pieces and shape into small rounds. Place ten of these rounds in the base of the loaf tin and brush with the rest of the butter which has been melted. Top with the remaining rounds and brush the top with the last of the butter.
Cover with oiled film and leave for a further 45 minutes to rise, until it reaches the top of the tin, Preheat the oven to 190°C. When risen again, sprinkle the top with the remaining quarter of the cheese and bake for 40 to 45 minutes or until risen and golden brown. Test in the usual way and cool on a rack.
