Cheddar vegetable couscous salad recipe details
Ingredients
300 ml | chicken broth |
200 g | couscous |
90 ml | white wine vinegar |
90 ml | olive oil |
1 clove(s) | garlic, minced |
1 pinch(es) | sugar |
180 g | Cheddar cheese, diced |
80 g | cucumber, unpeeled, diced |
180 g | tomatoes, diced |
30 g | green onions, chopped |
some | fresh dill or parsley, chopped |
Instructions
Heat broth in a medium saucepan. Stir in couscous, cover and remove from heat. Let stand 5 minutes. Transfer cousoucs to a large bowl, toss with a fork and let cool for 10 minutes.For the vinaigrette dressing combine vinegar, oil, garlic and sugar, whisking together thoroughly.
Add cheese, cucumber, tomato, green pepper, onions and dill or parsley to couscous. Add dressing and toss well to coat.
