Cheddar muffins recipe details
Ingredients
200 g | plain flour |
5 tbsp | corn meal or semolina |
1 tbsp | baking powder |
½ tsp | salt |
¼ tsp | freshly ground pepper |
125 g | strong Cheddar cheese, grated |
240 ml | milk |
1 large | egg |
3 tbsp | grain mustard |
90 g | butter, melted |
1 tbsp | chopped fresh herbs OR 1 tsp dried herbs |
Instructions
Preheat oven to Gas Mark 4, 180°C, 350°F. Either lightly oil 10 cups of a 12-cup muffin tray or use paper liners.Reserve 25g of the cheese as topping.
In a large bowl, mix flour, corn meal or semolina, baking powder, salt and pepper. Add 100g of the cheese and toss together.
In a small bowl, whisk the egg, milk and mustard until well mixed. Add to the dry ingredients together with the butter and herbs and mix to blend and to dampen the flour. If it looks lumpy, it is perfectly OK.
Spoon mixture into the prepared cups and sprinkle with a proportion of the reserved cheese. Bake for 20-25 minutes or until the tops feel springy to the touch.
Allow to cool slightly and serve warm or cold.
