Cheddar Cheese Sauce recipe

|3 tbsp||cake flour|
|1 tsp||English mustard, dry|
|80 g||Cheddar cheese, grated|
|2 tbsp||sherry, dry|
|salt and pepper to taste|
Melt the butter in a saucepan. Remove from the heat and blend in the flour.
Slowly add the milk, stirring until the mixture is smooth, then add salt and pepper and the mustard.
Cook while stirring for a couple of minutes until the sauce is thickened.
Remove from the heat add the cheese, stirring until it melts. Add the sherry.
