Cheddar braid recipe details
Ingredients
475 ml | water |
2 tsp | salt |
60 g | sugar |
60 g | non-fat powdered milk |
2 tbsp | butter |
300 g | Cheddar cheese, grated |
1 tsp | dried yeast |
750 g | white bread flour |
50 g | pitted green olives, sliced OPTIONAL |
Instructions
In a saucepan, gently heat the water, sugar, salt, powdered milk butter and 2/3 of the cheese until the cheese melts. Transfer to a large bowl and allow to cool slightly.Add the flour, yeast, the remaining cheese and the olives. Use a food mixer with a dough hook to mix until smooth and silky. If the dough is too dry, add warm water at about ½ tbsp at a time.
Cover the bowl and allow the dough to rise until doubled in size.
Preheat oven to Gas Mark 4, 180°C, 350°F.
Knock back the dough and divide into 3 equal pieces. Roll out each portion to a 12-inch strip and align them side by side.
Thin the far end of each strand by rolling and join those ends together. Press lightly and roll the end underneath. To braid, bring the left-hand strand over the centre one, then the right-hand braid over the current centre. Repeat 3 or 4 times until the strands are almost used. Press the ends together and fold under the loaf.
Place on a lightly greased baking sheet and allow to rise for about 30 minutes while covered with a damp cloth.
Bake for about 30 minutes or until golden. The bottom of the loaf should sound hollow when tapped. Allow to cool completely before serving.
