INGREDIENTS:

Serves 2-3

250g pork

2½ tbsp spare ribs sauce or char siew sauce (Lee Kum Kee)

7 cloves garlic, finely chopped

1/2 tsp dark soy sauce

2 tbsp sugar

1 tsp rice wine

Dash of pepper

METHOD:

  1. Marinade pork with all the rest of the ingredients for 2 hours.

  2. Line a baking tray or stainless steel dish with aluminium foil. Transfer marinated pork on to it.

  3. Bake char siew at 220 degC for about 45 minutes.

  4. Remove from oven. Drain excess gravy if any.

  5. Return char siew to oven and bake for another 10 minutes using upper heat (grill) to dry the exterior of char siew. Let the exterior of char siew burn a little if you like.

  6. Let cool and slice char siew. Serve with the gravy obtained from Step 4 with noodles or rice.
