Ingredients
For the pastry: | |
250 g | butter |
200 g | sugar |
4 | eggs |
300 g | flour |
1 tsp | baking powder |
1 pinch(es) | salt |
150 ml | Champagne |
For the frosting: | |
75 g | soft butter |
100 g | cream cheese |
150 g | icing sugar |
50 ml | Champagne |
½ tsp | vanilla extract |
For the decoration: | |
450 g | white chocolate |
1 tsp | coconut oil |
candy sprinkles |
Instructions
You need 40-45 lollipop sticks or wooden skewers and a bracket (e.g. a thick Styrofoam plate).Preheat the oven to 180°C.
For the pastry:
Cream together the softened butter and the sugar with an electric mixer for about 5 minutes at the highest level. Add the eggs, one at a time and whisk after each egg until incorporated.
In another bowl mix the flour with baking powder, vanilla extract and salt. Sift the flour mixture over the froth mixture and fold in. Slowly pour in the champagne and stir until well combined.
Grease a loaf pan, pour in the batter and bake for 45- 50 minutes or until a wooden skewer comes out clean.
Remove the cake from the oven and leave to cool completely.
For the frosting:
Cream together the softened butter and the cream cheese with an electric mixer. Add the remaining ingredients and stir until smooth.
Discard eventually hard and dark spots from the cake. Into a large bowl finely crumble the cake with your hands. Mix thoroughly the crumbles with your hands with the frosting. Shape the mixture to 3-4cm balls and place the balls onto a plate. Refrigerate for at least 1 hour.
For the decoration:
Melt the white chocolate in a water bath. Dip ever a lollipop stick into the chocolate and fix a ball on top. If the chocolate is not smooth enough you might add some coconut oil.
Dip the cake pops into the melted chocolate until well coated. Keep the sticks rolling in your hands until the chocolate is dry enough not to drip down anymore. Garnish with chocolate chips or candy sprinkles.
Put the cake pops into your bracket and store in the refrigerator until required.
