Celeste's heavenly souffle recipe details
- Ingredients
- 12 to 16 pieces of bread with crusts cut off (enriched white or light wheat works best)
- 6 to 7 egg whites, divided use
- 4 eggs, divided use
- 1 ripe banana
- 4 cups low- or non-fat milk, divided use (evaporated low-fat is a good substitute should you desire whipping cream)
- Favorite fruit, peeled (sliced apples, pears, and peaches work well)
- 1 to 2 Tablespoons granulated sugar
- Light whip cream

Spray a 9 x 11-inch baking dish with a non-stick cooking spray and line with 6 to 8 pieces of bread. Top bread with mixture of 3 to 4 egg whites, 2 eggs, banana, and 2 cups milk. Top mixture with 6 to 8 pieces of bread (layer like lasagna). Top bread with favorite fruit; put approximately 4 pieces of fruit on each bread slice. Sprinkle granulated sugar (or equal amount substitute) over sliced fruit. Mix 3 egg whites and 2 eggs and 2 cups of milk and pour over sliced fruit layer. Bake at 375 degrees for 45 minutes. Remove and let set 3 to 5 minutes and slice into squares equalling 6 to 8 servings per baking dish. Top with a few dabs of light whip cream.
Note:This can be made into a wonderful dessert by substituting cream sherry as part of the milk liquid. Almond, vanilla, or hazelnut extracts can also be used, as well as the Torani flavored syrups — caramel, vanilla, or almond roca.
