Ingredients

shortcrust pastry, to fill an 8-9 inch/20-22cm flan or pie tin
1 medium cauliflower, approx 750g
25 g margarine
25 g flour
300 ml milk, warmed
3 medium eggs
1 medium onion, finely chopped
Parmesan cheese, finely grated
salt and fresh ground pepper, to taste
parsley, finely chopped

Instructions

Clean and rinse the cauliflower, cut into florets and place in a large pan with water, add salt and boil until just tender. Drain off the water and leave until cool.

Preheat the oven to Gas Mark 4, 180°C, 350°F.

On a low heat, melt the margarine in a medium pan and add the onion. Cook until golden and add the flour, stirring continuously. Add the warm milk a little at a time while stirring, until it thickens and becomes creamy. Remove from heat.

Mash the cauliflower in a bowl, add the sauce, the cheese and eggs and mix well. Season to taste and mix again.

Grease a flan dish and line with pastry. Fill with the cauliflower mixture and top with more cheese and parsley.

Bake for about 40-45 minutes until the pastry is cooked and the top of the tart is golden brown.
