Cauliflower tart recipe details
Ingredients
shortcrust pastry, to fill an 8-9 inch/20-22cm flan or pie tin | |
1 medium | cauliflower, approx 750g |
25 g | margarine |
25 g | flour |
300 ml | milk, warmed |
3 medium | eggs |
1 medium | onion, finely chopped |
Parmesan cheese, finely grated | |
salt and fresh ground pepper, to taste | |
parsley, finely chopped |
Instructions
Clean and rinse the cauliflower, cut into florets and place in a large pan with water, add salt and boil until just tender. Drain off the water and leave until cool.Preheat the oven to Gas Mark 4, 180°C, 350°F.
On a low heat, melt the margarine in a medium pan and add the onion. Cook until golden and add the flour, stirring continuously. Add the warm milk a little at a time while stirring, until it thickens and becomes creamy. Remove from heat.
Mash the cauliflower in a bowl, add the sauce, the cheese and eggs and mix well. Season to taste and mix again.
Grease a flan dish and line with pastry. Fill with the cauliflower mixture and top with more cheese and parsley.
Bake for about 40-45 minutes until the pastry is cooked and the top of the tart is golden brown.
