Cauliflower crostini recipe details
Ingredients
1 head(s) | cauliflower, broken into pieces or smaller pieces |
1 tbsp | olive oil |
1 small | red onion, chopped |
1 clove(s) | garlic, minced |
1 tsp | fennel seeds |
salt and pepper, to taste | |
8 slice(s) | of bread |
2 tbsp | fresh parsley, chopped, for garnish |

Instructions
Bring lightly salted water to a boil, add the cauliflower florets, cover and cook until just tender, about 12 minutes. Drain and transfer the cauliflower florets to a bowl; reserve the cooking liquid.Heat some olive oil in the frying pan and sauté the onion and garlic until soft.
Add the cooked cauliflower, fennel seeds, and a pinch of salt and pepper. Cook, stirring occasionally, until the cauliflower is very tender, about 8 minutes
Add a few tablespoons of the cooking liquid if it begins to look dry.
Remove from heat and mash the cauliflower to a purée. Season with salt and pepper.
Brush the bread slices with olive oil and toast them for about 10 to 15 minutes.
Spoon the cauliflower mixture on the bread slices and drizzle with a little olive oil. Garnish with the parsley and serve.
