Ingredients
1. 2.5 kg catfish
2. 250gm bacon
3. 1 kg white onions
4. 5 hard boiled eggs
5. 1 can evaporated milk
6. 1 can pimento
7. 1.5 kg red potatoes
8. 5 cups water
9. Salt to taste
10. Pepper to taste
11. 1 tbsp butter

Method of preparation
1. Clean the fish and cut into medium size pieces. Dice the bacon, onions, potatoes and the eggs. Drain pimento and dice it.

2. Take a saucepan, add butter in it; cook the fish till it becomes crisp. Remove the fish and set aside. Now cook the bacon in the butter, add potatoes and onions to it.

3. Place fish in four cups of water in a pan. In this put the bacon, potatoes, onion, eggs, salt, pepper and pimento. Cook on a medium heat for about one hour. Put the milk in it stirring continuously. Catfish stew is ready.
