Carrots with lemon chicken recipe details
Ingredients
300 g | carrots, peeled and sliced |
120 g | chicken breast fillet |
salt and freshly ground black pepper | |
1 tsp | oil |
2 slice(s) | lemon |
2 sprig(s) | thyme, chopped |
1 tsp | honey |
100 ml | vegetable stock |
Instructions
Cook the carrots in salted water for 5-7 minutes, then drain.Season the chicken fillet with salt and pepper. In a pan heat the oil. Fry the fillet all around for 4 minutes. Add the lemon slices and the thyme and cook for another minute. Sprinkle with the honey. Pour in the stock and bring to a boil, cover and simmer for 5 more minutes.
Serve with the carrots.
