Carrot pineapple muffin recipe details
- Ingredients
- 1-1/2 cups flour
- 2/3 cup white sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- Pinch of nutmeg
- 2/3 cup vegetable oil
- 2 eggs
- 1 cup grated carrots
- 1/2 cup crushed pineapple with juice
- 1 teaspoon vanilla
In a bowl, whisk together flour, sugar, baking powder, baking soda, salt, and spices. Make a well in the center of the dry ingredients. Combine eggs, carrots, pineapple, and vanilla. Pour wet ingredients into well in dry ingredients and stir just until combined. Bake at 350 degrees for 25 to 30 minutes.
