Carrot muffins recipe details
- Ingredients
- 1 cup whole bran cereal
- 3/4 cup milk
- 2 Tablespoons oil
- 1 egg
- 3/4 cup flour
- 1/4 cup sugar
- 3 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup chopped dates
- 1 cup shredded carrots
- 20 Teaspoons brown sugar, divided use
- 10 teaspoons honey, divided use
Grease muffin cups. Place 2 teaspoons brown sugar and 1 teaspoon of honey in the bottom of each muffin cup. Put to one side.
In a large bowl, combine the cereal and milk. Allow to stand for 2 minutes and add the oil and the egg. Blend well. Add flour, salt, dates, and carrots. Stir until dry ingredients are moistened. Bake at 400 degrees for 15 to 20 minutes. Immediately invert onto waxed paper.
