Carrot cream soup with small meatballs recipe details
Ingredients
600 g | carrots, peeled and sliced |
2 | onions, chopped |
400 g | beef mince |
3 tbsp | breadcrumbs |
3 tbsp | milk |
1 | egg |
1 bunch(es) | parsley, chopped |
80 g | crème fraîche |
1 clove(s) | garlic, minced |
3 tbsp | butter |
1 ¼ l | vegetable stock |
1 tsp | mustard |
2 tbsp | oil |
salt and pepper | |
sugar |
Instructions
In a large saucepan heat the butter and sauté half of the onions together with the carrots and the garlic for 2 minutes. Pour in the stock and cook over medium heat for 15 minutes.Mix the beef mince with the remaining onions, the egg, mustard, breadcrumbs and the milk. Knead until well combined. Season with salt and pepper. Shape to small meatballs. In a pan heat the oil and fry the meatballs until brown and crispy all around.
Purée the soup, then stir in the parsley. Season to taste with salt, pepper and sugar. Stir in the crème fraîche and add the meatballs. Serve immediately.
