Ingredients
1/2 cup oil
3 cups grated carrots
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons cinnamon
1/2 teaspoon nutmeg
1 teaspoon vanilla
One 15-ounce can crushed pineapple (with juice)
3 cups grain mix flour (wheat, oats, barley, rye, rice, millet)
1/2 cup raisins
1/2 cup walnuts

Instructions:

Mix all ingredients together. Bake in 9 x 13-inch pan in 325-degree oven for 60 minutes.
