- 1/2 cup oil
- 3 cups grated carrots
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 teaspoons cinnamon
- 1/2 teaspoon nutmeg
- 1 teaspoon vanilla
- One 15-ounce can crushed pineapple (with juice)
- 3 cups grain mix flour (wheat, oats, barley, rye, rice, millet)
- 1/2 cup raisins
- 1/2 cup walnuts
Mix all ingredients together. Bake in 9 x 13-inch pan in 325-degree oven for 60 minutes.
