Ingredients

200 g carrots, grated
7  egg yolks
5  egg whites
1 glass(es) cherry brandy
300 g sugar
150 g ground almonds
150 g ground hazelnuts
½  lemon, grated peel
50 g breadcrumbs
50 g flour
1 tsp baking powder
salt
icing sugar

Instructions

Whisk the egg whites with 100g of sugar until stiff. Whisk the egg yolks and the remaining sugar until creamy. Add the nuts, lemon peel, flour, baking powder, breadcrumbs, brandy, a pinch of salt and the carrots and stir until well combined. Fold in the beaten egg white.

Preheat the oven to 200°C.

Pour the batter into a buttered cake form. Bake for 40-50 minutes.

Serve dusted with icing sugar.
