Carrot and nut cake recipe details
Ingredients
200 g | carrots, grated |
7 | egg yolks |
5 | egg whites |
1 glass(es) | cherry brandy |
300 g | sugar |
150 g | ground almonds |
150 g | ground hazelnuts |
½ | lemon, grated peel |
50 g | breadcrumbs |
50 g | flour |
1 tsp | baking powder |
salt | |
icing sugar |
Instructions
Whisk the egg whites with 100g of sugar until stiff. Whisk the egg yolks and the remaining sugar until creamy. Add the nuts, lemon peel, flour, baking powder, breadcrumbs, brandy, a pinch of salt and the carrots and stir until well combined. Fold in the beaten egg white.Preheat the oven to 200°C.
Pour the batter into a buttered cake form. Bake for 40-50 minutes.
Serve dusted with icing sugar.
