Carrot and coriander soup is a delicious and healthy recipe that combines the sweetness of carrots with the aromatic flavors of coriander. Ingredients

1 tbsp olive oil or ghee
1 large onion, chopped
2 clove(s) garlic, minced
1 handful red split lentils
450 g carrots, chopped
½ bunch(es) coriander, chopped and some saved for later
2  vegetable stock cubes
1 ½ l water
some cumin powder
some turmeric powder
freshly ground black pepper

Instructions

In a medium sized pot, heat the olive oil or ghee and fry the chopped onion for a couple of minutes.

Add the garlic and continue for another minute, stirring continuously to prevent the garlic from burning.

Add the washed and chopped carrots, the lentils, the coriander and spices. Pour over the water (I usually don’t measure how much as it depends on personal taste how thick it should be. Using enough water to just cover the vegetables a centimeter or more will make a very thick soup) and let it boil on a medium heat for about 10 minutes.

Take it off the heat and let it rest for a couple of minutes before using a blender to blend the soup until there are no big chunks left. Sprinkle over some more freshly ground black pepper and garnish with the reserved coriander.
