Carrot and coriander soup recipe details
Ingredients
1 tbsp | olive oil or ghee |
1 large | onion, chopped |
2 clove(s) | garlic, minced |
1 handful | red split lentils |
450 g | carrots, chopped |
½ bunch(es) | coriander, chopped and some saved for later |
2 | vegetable stock cubes |
1 ½ l | water |
some | cumin powder |
some | turmeric powder |
freshly ground black pepper |
Instructions
In a medium sized pot, heat the olive oil or ghee and fry the chopped onion for a couple of minutes.Add the garlic and continue for another minute, stirring continuously to prevent the garlic from burning.
Add the washed and chopped carrots, the lentils, the coriander and spices. Pour over the water (I usually don’t measure how much as it depends on personal taste how thick it should be. Using enough water to just cover the vegetables a centimeter or more will make a very thick soup) and let it boil on a medium heat for about 10 minutes.
Take it off the heat and let it rest for a couple of minutes before using a blender to blend the soup until there are no big chunks left. Sprinkle over some more freshly ground black pepper and garnish with the reserved coriander.
