Carribean jerk seasoning recipe details
Ingredients
6 | bay leaves, chopped |
2 tbsp | cinnamon powder |
2 tbsp | allspice |
2 tsp | cloves |
8 | habanero chilies, seeded and chopped |
2 tsp | freshly grated nutmeg |
8 clove(s) | garlic, roughly crushed |
1 tbsp | salt |
1 tsp | black peppercorns |
1 tbsp | juniper berries |
3 tbsp | thyme, roughly chopped |
200 ml | brown rum |
200 ml | malt vinegar |
2 | red onions, quartered |
Instructions
In a mortar combine all ingredients from bay leaves to thyme. Pestle the mixture until homogeneous. Transfer into a bowl and add onions, rum and vinegar. Purée with a hand blender.Pour the seasoning into sterilised jars and seal. Keep in the fridge until required.
Use as a marinade for chicken or beef.
