The most delicioso homemade pizza. The Caribbean part of this pizza comes from the rich tomato sauce “Rico” from here on the island and the pizza is made in our kitchen in Juana Diaz, Puerto Rico. I’ll let the a’La Gringo part up to you!

Ingredients

Serves: 4
  • 1 cup (8 ounces) tomato sauce (preferably “RICO” Puerto Rican)
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon dried marjoram
  • 1 1/4 teaspoon salt
  • 1/4 teaspoon dried Italian seasoning
  • 1 1/4 teaspoon sugar
  • 1/8 teaspoon red pepper
  • 2 teaspoon extra virgin olive oil, divided
  • 2 1/4 cups bread flour, divided
  • 3/4 cups water, warmed to 120 degrees F
  • 1 1/2 teaspoon active dry yeast
  • 1 cups shredded mozzarella cheese
  • 1/2 cups shredded Parmesan cheese
  • 2 roma tomatoes, sliced
  • 6 slices thinly sliced ham

Preparation method

Prep: 30 mins | Cook: 25 mins | Extra time: 1 hour, rising

1. Stir the tomato sauce, basil, oregano, onion powder, garlic powder, marjoram, salt, Italian seasoning, sugar, red pepper, and 1 teaspoon olive oil together in a sauce pan then bring to a boil. Shut of the heat keep stirring for a minute.
2. Divide water into 2 separate containers on with 1/2 cup in one with 1/4 cup in the second one. In the 1/2 cup add yeast and sugar; whisk until combined and let sit for 5 minutes. Add 1/4 cup of flour and let rest for 5 more minutes. In the 1/4 cup water add salt and 1 teaspoon olive oil; whisk until combined. Sift the 2 cups of flour in a mixing bowl. Mix the yeast sponge and salt water into the flour until it forms a dough. Knead dough for 5 minutes until smooth. Lightly oil a bowl with olive oil, coat dough with oil, cover with plastic wrap and towel, and let rise for 1 hour or doubled in size.
3. Preheat oven to 425 degrees Fahrenheit.
4. Roll dough out to a thin crust A stoneware pizza pan works great but a pizza stone will work. Place the crust in the pan, spray with olive oil or cooking spray and dust with garlic powder. Spread pizza sauce on the dough add a layer of mozzarella. Next place a layer of tomatoes, more mozzarella, then a thin layer of ham. Add another layer of cheese and more tomatoes. Top with last layer of mozzarella and finish with the Parmesan cheese. Bake for 25 minutes or until golden brown.
