Caramelized apple tart with mango ice cream recipe details
- Ingredients:
- Mango or Peach ice cream
- 1/2 cup sugar
- 1/2 cup whipping cream
- puff pastry
- 2 Golden Deliciousapples, peeled and cored
- egg yolk
Day before: Buy or make mango or peach ice cream.
Caramel:Make caramel by putting 1/2 cup sugar in a metal saute pan with high sides. Cook over medium heat until brown and caramel-covered and sugar appears to be melted. Remove from heat and stir in whipping cream. Reheat to smooth out. Chill overnight.
Cut puff pastry circles from slightly rolled sheet to fit your serving dish. Place sheets on serving dish (make sure it is oven-proof). Slice apples thinly. Put apple slices on pastry circle in a circle pattern. Brush egg yolk around edges of apples, pour 1/4 of caramel over each apple circle, and top with puff pastry. Crimp edges and brush pastry with egg yolk. Sprinkle a little sugar over and bake at 400 degrees for 15 minutes. Cool about 10 minutes, crush top slightly, and place a scoop of ice cream on top. Garnish with lemon balm or a slice of kiwi.
