Say thatfive times fast. It’s harder than making these crepes, which are like thinner pancakes (they cook faster too). Filled with sweet caramel, whipped cream and fresh raspberries, it’s like eating dessert for breakfast.

Ingredients

Serves: 2
  • 2 tablespoons milk
  • 2 tablespoons egg substitute
  • 1/2 teaspoon butter, melted
  • 1/4 teaspoon vanilla extract
  • 2 tablespoons flour
  • 2 ounces cream cheese
  • 1 tablespoon and 2 teaspoons caramel ice cream topping
  • 3/4 cup whipped topping
  • 1/2 cup fresh raspberries
  • 2 tablespoons white wine

Preparation method

Prep: 20 mins | Cook: 5 mins

1. Beat milk together with egg substitute, melted butter, and vanilla in a bowl. Chill in refrigerator for 1 hour.
2. Coat a 6-inch nonstick skillet with nonstick cooking spray. Set over medium heat. When skillet is hot, begin cooking the batter 2 tablespoons at a time. Each crepe will take about 1 minute to brown, flipping midway through cooking time. Add more cooking spray between batches.
3. Stir cream cheese together with caramel topping and whipped topping in a bowl. Fill each crepe with the mixture, then roll up like a wrap.
4. Stir berries and wine together in a small bowl. Microwave for 30 seconds on High, then top each crepe with some of the berry mixture and serve.
