Cape Cod Glazed, Cranberry Orange Cake recipe

- Ingredients
- 8 Tablespoons unsalted butter
- 1 cup granulated sugar
- 2 large eggs
- 2 teaspoons orange zest
- 1-1/2 cups all purpose flour
- 1-1/2 teaspoons baking powder
- 1/4 teaspoons salt
- 1/3 cup orange juice
- 2 cups chopped frozen or fresh cranberries
- Ingredients for Glaze
- 8 Tablespoons unsalted butter
- 3 Tablespoons orange juice
- 1/3 cup sugar
Instructions:

Cream sugar and butter until light and fluffy. Combine eggs and orange zest with sugar and butter mixture until light. Mix dry ingredients together, set aside. Stir juice and cranberries into butter/egg mixture then fold in dry ingredients just until mixed. Bake in a well grease and floured 9-inch tube pan at 350 degrees until cake springs back when lightly touched – don’t over bake.
Melt together glaze ingredients. When cake comes out and is still hot pour glaze over it. Let cake cool 1 hour before removing from the pan.
