Camp meat chili recipe details
This recipe does not call for beans, and I recommend you try it that way. They can always be added later if someone (like my wife) insists on ruining it with beans. While deer hunting on the Nueces River, someone shot some ‘camp meat’, and I had to cook it up. I diced it into 1/4 inch cubes, browned it in a cast iron pot over an open fire, and went from there. I didn’t have oregano, corn meal, crackers or garlic, but served flour tortillas with it and everyone enjoyed it.

Ingredients
Serves: 8- 3 pounds coarsely ground meat
- 6 tablespoons chili powder
- 1 tablespoon oregano
- 1 tablespoon cumin
- 1 tablespoon salt
- 1/2 tablespoon cayenne pepper
- 2 large cloves garlic, minced
- 1 teaspoon Tabasco (optional)
- 1 1/2 quarts water
- 1/4 cup white or yellow corn meal
Preparation method
Prep: 10 mins | Cook: 2 hours1. In Dutch oven, brown ground meat; drain. Add seasonings and water, heat to boil. Reduce heat, cover, and simmer for 1 hour and 30 minutes.
2. Skim off fat. Stir in corn meal and simmer uncovered for 30 minutes. Stir occasionally.Cook’s note:
Venison is excellent. The secret is to use coarsely ground meat.
