Ingredients
2 tbsp | raisins |
2 cl | red wine |
6 | eggs |
200 g | curd cheese |
2 tbsp | flour |
2 tbsp | milk |
4 tbsp | refined sugar |
2 tbsp | butter |
fresh mint leaves, chopped | |
100 g | mixed berries |
Instructions
Soak the raisins in red wine. Separate the eggs. Preheat the oven to 180°C.Mix the egg yolks with the curd cheese, flour, soaked raisins and the milk. Whisk the egg whites with 2 tablespoons of sugar until stiff. Fold the beaten egg white into the batter. In an ovenproof pan or casserole dish, melt the butter. Pour in the batter and bake for 12 minutes.
Take out of the oven and pick to pieces with a fork. Sprinkle with the remaining sugar and bake until the sugar has caramelized.
Serve sprinkled with the mint and mixed berries.
