Ingredients:
3 cloves garlic, chopped
1 onion, chopped
1 zucchini, sliced
1 yellow squash, sliced
2/3 can of corn kernels
1/2 cup chopped green chile
2/3 cup Jack cheese, grated
2 Tablespoons chopped cilantro
1 teaspoon basil
salt, pepper
10 eggs for 12-inch skillet (8 eggs for 10-inch skillet)
Instructions:

Saute in olive oil: garlic, onion, and squashes until slightly tender. Add corn, chile, Jack cheese, cilantro, and basil. Mix well. Add eggs, salt, and pepper. Mix well. Cook over medium heat on burner for 3 to 4 minutes. Transfer to a 300-degree oven for about 15 minutes or until completely cooked.

Serves: 8
