Calabacitas frittata recipe details
- Ingredients:
- 3 cloves garlic, chopped
- 1 onion, chopped
- 1 zucchini, sliced
- 1 yellow squash, sliced
- 2/3 can of corn kernels
- 1/2 cup chopped green chile
- 2/3 cup Jack cheese, grated
- 2 Tablespoons chopped cilantro
- 1 teaspoon basil
- salt, pepper
- 10 eggs for 12-inch skillet (8 eggs for 10-inch skillet)
Saute in olive oil: garlic, onion, and squashes until slightly tender. Add corn, chile, Jack cheese, cilantro, and basil. Mix well. Add eggs, salt, and pepper. Mix well. Cook over medium heat on burner for 3 to 4 minutes. Transfer to a 300-degree oven for about 15 minutes or until completely cooked.
