Ingredients
2 | chicken breast fillets |
4 slice(s) | white bread, cut into 1cm cubes, for croûtons |
6 | anchovy fillets |
2 tbsp | lemon juice |
Worcester sauce | |
50 g | freshly grated Parmesan cheese |
salt and freshly ground black pepper | |
1 head(s) | romaine lettuce |
2 tbsp | honey |
5 tbsp | olive oil |
100 ml | olive oil |
paprika powder | |
2 clove(s) | garlic, chopped |
1 tsp | mustard |
2 | egg yolks |
Instructions
Mix 1 tablespoon of oil with 1 tablespoon of honey and season with salt, pepper and paprika powder. Add the meat and marinate for an hour.In a pan heat 3 tablespoons of oil and fry the croûtons until golden and crispy. In another pan, heat 1 tablespoon of oil and fry the meat over medium-low heat until golden all around and cooked through.
Dice the anchovies. In a blender, mix the egg yolks with mustard, lemon juice and the remaining honey. Add the remaining oil drop by drop first, then in a thin stream. Add the garlic and the anchovies. Season to taste the mayonnaise with salt, pepper and Worcester sauce.
Cut the meat into thin slices.
In a salad bowl, combine the lettuce with Parmesan cheese, croûtons and mayonnaise and toss gently. Divide the chicken slices on top and serve immediately.
