Ingredients

3 clove(s) garlic, peeled and chopped
1 small onion, peeled and roughly chopped
50 ml olive oil
250 g brown button mushrooms, cleaned and roughly chopped
1 handful walnuts
2  red hot chilli peppers, chopped
250 ml hot vegetable stock
5  sun-dried tomatoes
bunch(es) parsley
salt

Instructions

In a large frying pan fry garlic and onions in some olive oil. Add mushrooms, chilli and dried tomatoes and fry gently for approximately 5 minutes or until soft

Put parsley and walnuts into a food processor. Add the pan contents, the remaining olive oil and the stock and blitz until smooth. Season to taste the sauce with salt.

Serve with pasta.
