Ingredients

1 medium onion, chopped
2 stalk(s) celery, chopped
1 medium carrot, peeled, chopped
1 tbsp butter
1  butternut squash, peeled, seeds removed, chopped
1  green apple, peeled, cored, chopped
800 ml vegetable broth
1 pinch(es) nutmeg
salt and pepper, to taste

Instructions

Combine butter, onion, celery, and carrot in a large saucepan. Cook for 5 minutes. Add squash, apple, and broth. Bring to boil and cook until squash is soft, 10-15 minutes. Process in a blender until smooth. Season to taste and serve.
