Ingredients
1 medium | onion, chopped |
2 stalk(s) | celery, chopped |
1 medium | carrot, peeled, chopped |
1 tbsp | butter |
1 | butternut squash, peeled, seeds removed, chopped |
1 | green apple, peeled, cored, chopped |
800 ml | vegetable broth |
1 pinch(es) | nutmeg |
salt and pepper, to taste |
Instructions
Combine butter, onion, celery, and carrot in a large saucepan. Cook for 5 minutes. Add squash, apple, and broth. Bring to boil and cook until squash is soft, 10-15 minutes. Process in a blender until smooth. Season to taste and serve.Preparation time:
