Ingredients

125 ml lukewarm water, around 40°-45ºC/100°-110ºF
4 tsp active dried yeast
175 ml warm milk, 40°-45°C/100°-110°F
60 g sugar
3 tbsp unsalted butter
1 ½ tsp salt
2 medium eggs
500 g plain flour, you may not need all
For the Glaze:
1 medium egg, beaten
poppy seeds, dehydrated onions or sesame seeds for example

Instructions

Place the water into a large bowl. Sprinkle the yeast over the surface, add milk, sugar, butter, salt, eggs and half of the flour. Beat for 2 minutes with an electric mixer on medium speed. Add more of the remaining flour to obtain a soft but not sticky dough.

Turn out onto a lightly floured surface and knead for 4-6 minutes until smooth and pliable. Form into a ball and transfer to a lightly greased bowl. Roll the dough around a couple of times to oil the surface, cover and allow to rise in a warm place for about 35-45 minutes, or until doubled in size.

Knock back the dough and turn out to a lightly floured surface. Divide into four equal pieces and then sub-divide each piece into 3 portions. Form each piece into a ball and arrange the balls on a lightly greased baking sheet. Lightly flatten the balls to about a 4-inch, 10 cm disc. Cover and allow to rise in a warm place for about 30-40 minutes, or until doubled in size.

Preheat the oven to Gas Mark 6, 200ºC, 400ºF.

Bake for 12-15 minutes until golden brown and well risen. The bottoms should sound hollow when tapped. Remove from tray and cool on a wire rack.

Serve plain, if wished.

Variations:
You can add a topping before baking; dehydrated onions, poppy seeds or sesame seeds are the norm. If adding a topping, glaze with a beaten egg.
