A recipe inspired by the cuisine of the Spanish state of Andalusia–also the place where bullfighting originated. This meaty dish packed with Mediterranean flavor gives you all the power you need to confront a bull–or just that overgrown grass on the side of the house.

Ingredients

Makes: 4
  • Pork:
  • 2 (3/4 pound) pork tenderloins
  • 3 tablespoons olive oil
  • 3 garlic cloves, minced
  • 2 teaspoons paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon cayenne pepper
  • 1/8 teaspoon ground nutmeg
  • Olive relish:
  • 3/4 cup pimento-stuffed olives, quartered
  • 1/2 cup cherry tomatoes, quartered
  • 1/4 cup chopped red onion
  • 1 1/2 teaspoons capers, drained
  • 1 tablespoon olive oil
  • 1 tablespoon red wine vinegar
  • 1 garlic clove, minced

Preparation method

Prep: 20 mins | Cook: 20 mins | Extra time: 8 hours, marinating

1. Brush pork with oil, then season evenly with garlic, paprika, salt, cinnamon, cayenne, and nutmeg. Wrap in plastic wrap and place in refrigerator for 8 hours to marinate.
2. Preheat oven to 450 degrees F. Unwrap pork and place in a 13×9-inch baking dish.
3. Bake for about 20 minutes, until pork tenderloins reach an internal temperature of 145 degrees F. Remove from oven and let stand for 5 minutes.
4. While pork is standing: stir all olive relish ingredients together in a bowl.
5. Slice pork and serve with olive relish.
