Brussels sprouts with red wine shallots and garlic recipe details
Ingredients
12 large | shallots, peeled and left whole |
40 clove(s) | garlic, peeled and left whole |
1 ½ kg | Brussels sprouts, trimmed |
200 ml | red wine |
200 ml | chicken stock |
4 tbsp | olive oil |
1 tbsp | butter |
Instructions
Heat the olive oil and butter in a heavy casserole with a tight lid over medium high heat. Add the shallot and garlic, and sauté until lightly browned for about 5 minutes. Add the Brussels sprouts, toss well and cook about 5 minutes.Add red wine and cook 5 more minutes, stirring occasionally. Add the chicken stock, stir well and over high heat bring to the boil. Then reduce heat, cover and braise just until Brussels sprouts are tender.
