Brussels Sprouts with Red Wine Shallots and Garlic recipe

|12 large||shallots, peeled and left whole|
|40 clove(s)||garlic, peeled and left whole|
|1 ½ kg||Brussels sprouts, trimmed|
|200 ml||red wine|
|200 ml||chicken stock|
|4 tbsp||olive oil|
Heat the olive oil and butter in a heavy casserole with a tight lid over medium high heat. Add the shallot and garlic, and sauté until lightly browned for about 5 minutes. Add the Brussels sprouts, toss well and cook about 5 minutes.
Add red wine and cook 5 more minutes, stirring occasionally. Add the chicken stock, stir well and over high heat bring to the boil. Then reduce heat, cover and braise just until Brussels sprouts are tender.
