Brussels Sprouts with Minced Meat and Rice recipe

Ingredients
1 kg | Brussels sprouts |
1 large | onion, chopped |
400 g | lean minced beef |
600 ml | vegetable stock |
1 tbsp | oil |
250 g | rice |
salt and pepper, to taste | |
nutmeg |
Instructions
Cook the rice as usual.
In a saucepan, cover the Brussels sprouts with vegetable stock and bring to a boil. Cook for 5-8 minutes at a rolling boil until the sprouts are done, but still a bit firm to the bite and still bright green. Strain through a sieve and collect the stock. Season the sprouts with nutmeg.
Heat oil in a deep pan or a wok and fry the onions and minced meat until the meat is browned and crumbly. Deglaze with approximately 200ml of the vegetable stock and cook stirring occasionally for some minutes. Season to taste with salt and pepper.
Transfer into a warmed bowl, add the cooked rice and Brussels sprouts and toss until well combined. Check seasoning and correct if necessary.
