Ingredients

For the cake:
110 g butter
80 g cooking chocolate, chopped
200 g sugar
100 g plain flour
2  eggs
1 tsp vanilla extract
tsp salt
60 g butter
60 g icing sugar
For the Frosting:
300 g plain chocolate, chopped
2 tbsp Grand Marnier, optional
For the decoration:
some chopped nuts
white chocolate sprinkles

Instructions

You need 40-45 lollipop sticks or wooden skewers and a bracket (e.g. a thick Styrofoam plate).

Preheat your oven to 180°C. Grease a baking tin.

Melt 110g butter with 200g sugar. Add 55g of the cooking chocolate to the hot mixture and stir until the chocolate has melted and all is well combined. Whisk in eggs and milk. Add flour, vanilla extract and salt and stir until the batter is smooth.

Pour the mixture into a baking tin and bake for about 20-25 minutes. Take out of the oven and leave to cool completely.

In a second bowl melt the remaining 60g of butter with the remaining 25g cooking chocolate and stir until the chocolate has melted. Add the icing sugar and a tablespoon of Grand Marnier and mix well.

Crumble the cooled brownie pastry into this mixture and mix with your hands until well combined. Shape the mixture to 3-4cm balls and place the balls onto a plate. Refrigerate for at least 1 hour.

Melt the plain chocolate in the microwave. Dip ever a lollipop stick into the chocolate and fix a cake ball on top.

Dip the Cake Pops into the melted chocolate until well coated. Keep the stick rolling in your hands until the chocolate is dry enough not to drip down anymore. Now roll half of the balls in the nuts and the other half in white chocolate sprinkles.

Put the cake pops into your bracket and place into the refrigerator until required.
