Broccoli Salad recipe

Ingredients
300 g | bacon, sliced |
230 ml | mayonnaise |
10 ml | cider vinegar |
100 g | white sugar |
500 g | broccoli, in small florets, blanched for 2 minutes |
70 g | raisins |
200 g | cashew nuts, toasted and roughly chopped |
1 small | red onion, finely diced |
Instructions
Place the bacon in a large, deep pan and fry until golden brown and crispy. Drain on kitchen paper, allow to cool and crumble into pieces.
Whisk the mayonnaise with the cider vinegar and the sugar in a salad bowl until the sugar has dissolved. Add the broccoli, the raisins, the cashew nuts and the onions.
Cover and refrigerate the salad for at least 2 hours. Then leave to stand at room temperature 15 to 20 minutes.
Fold in the crumbled bacon and serve immediately.
