Broccoli cornbread details
This is an old family favorite. My daughter always wanted this included in her college care packages.
- Ingredients:
- 1 package corn bread mix
- 1/2 cup whole corn, drained
- 3/4 cup cottage cheese
- 1 teaspoon salt
- 1 small chopped onion
- One 10-ounce package frozen chopped broccoli, thawed and drained
- 1 stick butter, melted
- 4 eggs, beaten
Mix well. Bake at 400 degrees for 15 minutes. Reduce oven temperature to 375 degrees and bake 30 minutes more.
