Broccoli cauliflower spinach gratin recipe details
Ingredients
450 g | cauliflower, broken into florets |
400 g | broccoli, broken into florets |
20 g | butter |
1 tbsp | olive oil |
40 g | plain wholemeal flour |
100 g | Cheddar cheese, grated |
75 g | fat-free natural yoghurt |
salt & freshly ground black pepper | |
125 g | baby spinach leaves |
50 g | almond flakes |
Instructions
Preheat the oven to 200°C.Place the cauliflower and broccoli in a pan, cover with boiling water and cook for 10-12 minutes, until tender but not soft. Drain and reserve the cooking water.
Melt the butter in a small pan with the olive oil. Stir in the flour to make a roux. Gradually add 300-350ml of the cooking water, stirring constantly, until the sauce thickens.
Remove the sauce from the heat and stir in half the cheese and the yoghurt. Season.
Place the baby leaf spinach in the base of an ovenproof dish and spread the cauliflower and broccoli over the top.
Pour over the sauce, sprinkle with the remaining cheese and almond flakes and bake for 20 minutes until golden on top. Serve.
