Broccoli and anchovy salad recipe details
Ingredients
900 g | broccoli |
2 tbsp | capers |
4 | anchovy fillets, drained and cut into small pieces |
45 g | black olives, pitted |
45 g | green olives, pitted |
1 | red bell pepper, seeded, deribbed and cut into srips |
2 tbsp | white wine vinegar |
salt and fresh ground pepper to taste | |
75 ml | extra virgin olive oil |
Instructions
Cut the broccoli florets from the stems. Boil florets in salted water until barely tender, 2-3 minutes. Drain, cool under cold running water and drain again. Place them in a salad bowl.Rinse the capers, drain and pat dry with paper towels. Add to the bowl along with the anchovy fillets black and green olives and bell pepper.
Stir together the vinegar and salt and pepper until mixed well. Add the oil and stir vigorously until well blended.
Pour the dressing over the salad, toss well and serve.
