|1||lemon, grated rind|
|65 g||candied lemon peel|
|65 g||candied orange peel|
|100 g||candied cherries|
InstructionsIn a bowl combine the butter, sugar, salt, lemon zest, 250g flour and the rum. Beat in the eggs and whisk until well combined.
Preheat the oven to 175°C.
Mix together the sultanas, candied lemon and orange peel, candied cherries and 50g of the flour and fold the mixture in the batter. Pour the batter into a lined cake form and bake for 60-70 minutes.
